Job Description:
Make sure food is cooked to the right temperature and for the right amount of time. Check the recipes and Scada system for the correct details about the food.
Minimum Requirements
- Matric or recognized equivalent qualification.
Advantageous: Technical trade qualification (N3 or N4) - Minimum 2 years’ experience in Manufacturing
- Must have experience working in the food manufacturing industry as a cooker.
- Must understand lean principles.
- Exposure to World Class Manufacturing techniques.
Duties and Responsibilities
Safety and Quality:
- Always follow Nando’s Feitoria’s safety guidelines.
- Use required safety gear and personal protective equipment.
- Tell the manager about any risky actions or situations.
- Never do anything that is unsafe.
- Make sure all products made in your area are high quality, meet customer needs, and follow the production plan and reports.
- Fill out PCD/Summary reports correctly and on time in the shopware system.
- Always follow safety rules.
- Keep your work area clean and organized, following the 5S standard.
- Always follow safety rules that prevent injuries and prohibit alcohol use.
- Be aware of slipping or tearing hazards.
- Be careful when working near hot products or surfaces to avoid burns.
- Lift items carefully.
- Check that the temperature is right before taking samples.
- If the temperature isn’t right, the cooker must create a job card.
- Write down the exact time the sample was taken on the cooking record.
Send the recipe and the sample to the lab for testing.
The recipe should have the following information: Date of production, production code, SAP batch number, material number and it needs to be signed off by the production group leader. Also attach pick slip to the recipe.
Operations and Equipment/Machine Usage:
- Follow the team leader’s instructions (recipes) for each day’s production.
- Keep the workspace neat and dry at all times.
- Make sure all pre-measured ingredients and their amounts match the recipe.
- The Scada system will handle the cooking process automatically.
- Fill out the cooking record when starting a batch.
- The Scada system can print records of cooking temperatures and times.
- Make sure the steritainer has a label with the product name, production code, production date, and line number.
- The cooker should check that all ingredients are added and that the system is adding water, oil, and vinegar.
- Tell the Sanitation officer to start cleaning the pots once they are empty.
- Report any downtime on Shopware.
- Ensure safety, quality, productivity, and equipment goals are met as per the set KPIs.
Check fluid amounts each day and give the data to the team leader to look over.
- Make sure the work area reaches an OEE score of 65% or higher when making products.
- Make sure the work area’s waste is 2% or less when making products.
- Make sure the right amount of stock is in the work area when making products.
Miscellaneous Tasks/Activities:
- Responsible for checking or verifying tools/parts, removing, and sending to maintenance for repairs.
- Capture production progress on shopware system accurately at start, during a stoppage/downtime and at the end of the job.
- Participate in all required inventory control activities, namely, cycle counts, and stock takes.
- Participate in The Nando’s Feitoria (Operational Excellence) initiatives.
- Any other reasonable task assigned by the team leader or manager.
- Be prepared to work overtime when required.
